Ingredients

  • 1 lb whole squid (cleaned)
  • 4 count garlic cloves
  • 1 count lime (zested + juiced)
  • 1 count Thai red chili
  • 1.5 tbsp fish sauce
  • ½ tsp coconut sugar (or brown sugar)
  • ¼ cup fresh cilantro, chopped

Instructions

  1. 1

Mince garlic and chili together. Whisk with fish sauce, lime juice, zest, and sugar until sugar dissolves.

  2. 2

Pat squid dry. Cut into 3-inch rings; score the inner surface in a crosshatch pattern.

  3. 3

Heat olive oil in a large skillet over high heat until it shimmers and barely smokes, ~2 minutes.

  4. 4

Add squid in a single layer. Sear 90 seconds per side without moving—you want hard char, not pale.

  5. 5

Pour garlic-lime dressing over the squid. Toss to coat and warm through, ~30 seconds.

  6. 6

Scatter cilantro over top. Serve immediately with rice or as-is.
