Ingredients
- 1 lb whole squid (cleaned)
- 4 count garlic cloves
- 1 count lime (zested + juiced)
- 1 count Thai red chili
- 1.5 tbsp fish sauce
- ½ tsp coconut sugar (or brown sugar)
- ¼ cup fresh cilantro, chopped

Mince garlic and chili together. Whisk with fish sauce, lime juice, zest, and sugar until sugar dissolves.

Pat squid dry. Cut into 3-inch rings; score the inner surface in a crosshatch pattern.

Heat olive oil in a large skillet over high heat until it shimmers and barely smokes, ~2 minutes.

Add squid in a single layer. Sear 90 seconds per side without moving—you want hard char, not pale.
