Ingredients

  • 1.5 lbs pork shoulder, thinly sliced (about 1/4 inch)
  • ⅓ cup soy sauce
  • 3 tbsp brown sugar
  • 3 tbsp calamansi or lime juice
  • 4 cloves garlic, minced
  • ½ tsp black pepper
  • 2 tbsp vegetable oil

Instructions

  1. 1

Stir together soy sauce, brown sugar, calamansi juice, garlic, and black pepper in a bowl until sugar dissolves.

  2. 2

Add pork slices to the marinade, toss to coat evenly, and let sit for 5 minutes while you heat your skillet.

  3. 3

Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

  4. 4

Working in batches, add pork to the skillet without crowding—you'll hear a loud sizzle.

  5. 5

Cook 2–3 minutes per side until edges are charred and the pork is cooked through, stirring occasionally.

  6. 6

Serve immediately over white rice with pickled vegetables (atchara) or fresh tomato salad on the side.
