Ingredients
- ½ lb ground lamb
- 1 large onion, divided
- 2 medium tomatoes
- 1 whole green bell pepper
- ¼ cup fresh parsley and mint, chopped
- 1 whole lemon
- ½ tsp sumac or red pepper flakes

Mix ground lamb with half the minced onion, salt, pepper, and half the herbs. Form into 2 thick patties.

Heat oil in a large skillet over medium-high until shimmering. Sear lamb patties 4 minutes per side until edges are charred and cooked through.

Move lamb to the side of the skillet. Add tomato halves and pepper pieces cut-side down; char 3 minutes until blackened.

Toss remaining raw onion with lemon juice, salt, and remaining herbs to make a quick salad.
