Ingredients
- 1 rack (about 1 lb) lamb chops (6–8 bone-in, 1.5 inches thick)
- 1 whole lemon
- 4 cloves, minced garlic
- 1 tsp sumac
- ¼ cup, chopped fresh mint leaves
- 3 tbsp olive oil

Pat lamb chops dry. Season both sides generously with salt, pepper, and sumac.

Heat 2 tbsp olive oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

Sear chops 2 minutes per side without moving them. Edges should be charred and crusted.

Push chops to the skillet's edge. Add remaining 1 tbsp oil and minced garlic to the center.
