Ingredients

  • 1 rack (about 1 lb) lamb chops (6–8 bone-in, 1.5 inches thick)
  • 1 whole lemon
  • 4 cloves, minced garlic
  • 1 tsp sumac
  • ¼ cup, chopped fresh mint leaves
  • 3 tbsp olive oil

Instructions

  1. 1

Pat lamb chops dry. Season both sides generously with salt, pepper, and sumac.

  2. 2

Heat 2 tbsp olive oil in a 10-inch skillet over medium-high until it shimmers, about 90 seconds.

  3. 3

Sear chops 2 minutes per side without moving them. Edges should be charred and crusted.

  4. 4

Push chops to the skillet's edge. Add remaining 1 tbsp oil and minced garlic to the center.

  5. 5

Toast garlic 45 seconds until fragrant. Squeeze lemon juice over chops and toss everything together.

  6. 6

Plate chops. Top with fresh mint and a pinch of sumac. Serve immediately with pan juices.
