Ingredients

  • 8 oz halloumi cheese
  • 4 cups watermelon
  • ½ cup feta cheese
  • ¼ cup fresh mint leaves
  • ¼ medium red onion
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp sea salt
  • ¼ tsp black pepper

    Slice the halloumi cheese into 0.25-inch thick slabs. Pat dry with paper towels and season lightly with salt and pepper on both sides. Heat a cast-iron skillet or grill pan over medium-high heat until very hot, about 2 minutes.

    Working in batches to avoid crowding, sear the halloumi slices for 2-3 minutes per side until deep golden brown and charred with caramelized edges. Transfer to a plate immediately after charring.

    Cut the watermelon into 1-inch cubes or use a melon baller for uniform pieces. Thinly slice the red onion and tear fresh mint leaves by hand into bite-sized pieces.

    In a large bowl, whisk together olive oil, lemon juice, sea salt, and black pepper until emulsified. Add the watermelon, red onion, and crumbled feta cheese, then toss gently to coat with the dressing.

    Divide the salad among four plates or a serving platter. Top with the warm charred halloumi slices and scatter fresh mint leaves over the top. Serve immediately while the halloumi is still warm, with extra lemon wedges on the side if desired.
