Ingredients

  • 1 lb ground lamb
  • ⅓ cup yellow onion, finely minced
  • ⅓ cup fresh parsley, chopped
  • ½ tsp cumin
  • ¼ tsp sumac
  • ½ cup plain yogurt
  • 1 whole lemon

Instructions

    Mix ground lamb, minced onion, parsley, cumin, sumac, 0.5 tsp salt, and black pepper in a bowl.

    Divide mixture into 4 portions and mold each firmly around a metal skewer, forming a long log.

    Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Sear kebabs 3 minutes per side without moving, until edges blacken and meat browns deeply.

    Transfer kebabs to a plate and squeeze half a lemon over them.

    Serve hot with yogurt on the side and remaining lemon wedges for squeezing.
