Ingredients

  • ½ lb white fish fillets (sea bass or catfish), patted dry
  • 4 oz rice noodles (dried)
  • 3 tbsp fish sauce
  • 1 whole lime (juiced)
  • 1 whole shallot, sliced thin
  • ½ cup fresh mint and cilantro, chopped
  • ¼ tsp red chili flakes

Instructions

    Boil rice noodles in salted water until tender, ~4 minutes. Drain and rinse with cold water.

    Stir together fish sauce, lime juice, sliced shallot, and chili flakes in a small bowl.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, ~90 seconds.

    Sear fish skin-side up for 2 minutes without moving. Flip and sear another 90 seconds until opaque.

    Divide noodles between two bowls. Top with fish, pour dressing over, and scatter herbs on top.
