Ingredients
- ½ lb white fish fillets (sea bass or catfish), patted dry
- 4 oz rice noodles (dried)
- 3 tbsp fish sauce
- 1 whole lime (juiced)
- 1 whole shallot, sliced thin
- ½ cup fresh mint and cilantro, chopped
- ¼ tsp red chili flakes

Boil rice noodles in salted water until tender, ~4 minutes. Drain and rinse with cold water.
