Ingredients
- 1 cup dried chapulines (grasshoppers)
- 2 whole avocados, ripe
- 1 whole lime
- 2 whole garlic clove
- ½ teaspoon salt
- 2 tablespoon olive oil

Mince the garlic cloves until the pieces are smaller than a grain of rice—about the size of pencil-tip dots—then set aside on a small plate.

Cut the lime in half crosswise, then cut each half into two wedges; set the wedges aside on a small plate.

Cut each avocado in half lengthwise around the large pit, twist the halves apart, and scoop the flesh into a small bowl using a spoon.

Mash the avocado with a fork until it reaches the texture of chunky peanut butter with some small lumps still visible, about 30 seconds of mashing.

Squeeze the juice from one lime wedge over the mashed avocado, sprinkle with 0.25 teaspoon of salt, and stir gently with the fork until just combined; set aside.

Pour 2 tablespoons of olive oil into a medium skillet and place it over medium-high heat until the oil shimmers and slides quickly when you tilt the pan, about 90 seconds.

Add the dried chapulines to the hot oil and stir constantly for 2–3 minutes until they smell deeply toasted and nutty and the edges turn slightly darker in color.

Remove the skillet from heat, add the minced garlic to the warm chapulines, stir for 10 seconds so the garlic releases its aroma, then sprinkle with 0.25 teaspoon of salt and stir to combine.

Transfer the warm chapulines to a serving plate or small bowl and place it next to the guacamole bowl on the table.

Arrange the lime wedges on the side of the plate, then invite diners to squeeze lime over the chapulines or guacamole as desired.
