Ingredients

  • 1 lb flank steak
  • 2 medium bell peppers (red and yellow), sliced into strips
  • 1 large yellow onion, sliced into strips
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 8 count flour or corn tortillas
  • ¾ cup shredded cheddar or oaxaca cheese
  • 1 can (15 oz) refried beans
  • ¾ cup salsa

Instructions

    Pat steak dry and season generously with salt, pepper, and cumin on both sides.

    Heat a 12-inch cast iron skillet over medium-high until smoking, about 2 minutes.

    Sear steak 3 minutes per side for medium-rare without moving. Transfer to a cutting board.

    In the same skillet, sauté peppers and onions 5 minutes until softened and charred at edges.

    Slice steak against the grain. Toss with lime juice and return to skillet with vegetables.

    Warm tortillas, then serve steak and peppers sizzling with cheese, refried beans, and salsa.
