Ingredients
- 1 lb flank steak
- 2 medium bell peppers (red and yellow), sliced into strips
- 1 large yellow onion, sliced into strips
- 2 tbsp lime juice
- 1 tsp cumin
- 8 count flour or corn tortillas
- ¾ cup shredded cheddar or oaxaca cheese
- 1 can (15 oz) refried beans
- ¾ cup salsa

Pat steak dry and season generously with salt, pepper, and cumin on both sides.

Heat a 12-inch cast iron skillet over medium-high until smoking, about 2 minutes.
