Ingredients

  • 1 medium carrot
  • ½ cup walnuts
  • ½ cup white chocolate chips
  • 2 tablespoons honey
  • ½ cup rolled oats

Instructions

  1. 1

Grate the 1 medium carrot finely and chop the 0.5 cup walnuts into small pieces. In a bowl, combine the grated carrot, chopped walnuts, 0.5 cup rolled oats, and 2 tablespoons honey until well mixed.

  2. 2

Melt the 0.5 cup white chocolate chips in a microwave in 20-second bursts, stirring between each, until smooth. Pour the melted chocolate over the carrot mixture and stir until everything is coated.

  3. 3

Scoop out heaping tablespoons of the mixture and roll into 1-inch balls with your hands. Place them on a plate lined with parchment paper.

  4. 4

Refrigerate the bites for 15 minutes until firm. Store in an airtight container in the fridge for up to a week.
