Ingredients
- 1.5 lbs beef chuck, cut into 1.5-inch chunks
- 1 lb potatoes, peeled and cut into 1-inch cubes
- 1 medium onion, diced
- 4 cloves garlic, minced
- 1 can (10 oz) canned diced tomatoes with green chiles
- 1 cup beef broth

Heat olive oil in a large pot over medium-high heat until shimmering, about 90 seconds.

Brown beef in batches without stirring for 3 minutes per side until deep golden crust forms.

Remove beef to a plate. Add onion to the pot and cook until softened and browned, 4 minutes.

Stir in garlic and cook until fragrant, about 30 seconds.

Pour in tomatoes with green chiles and broth, scraping up browned bits from the bottom.

Return beef to the pot. Add potatoes and stir to combine.
