Ingredients
- 1.5 lb flank steak or skirt steak
- 2 whole lime
- 4 cloves garlic cloves, minced
- 1 tsp cumin
- 8 whole scallions, white and light green parts
- 3 tbsp olive oil

Whisk lime juice, minced garlic, cumin, and 2 tbsp olive oil in a bowl.

Pat beef dry, then rub generously with salt and pepper on both sides.

Coat beef in marinade. Let sit at room temperature while you heat the grill.
