Ingredients

  • 1.5 lb flank steak or skirt steak
  • 2 whole lime
  • 4 cloves garlic cloves, minced
  • 1 tsp cumin
  • 8 whole scallions, white and light green parts
  • 3 tbsp olive oil

Instructions

    Whisk lime juice, minced garlic, cumin, and 2 tbsp olive oil in a bowl.

    Pat beef dry, then rub generously with salt and pepper on both sides.

    Coat beef in marinade. Let sit at room temperature while you heat the grill.

    Heat grill or cast-iron skillet over high heat until very hot, ~3 minutes.

    Sear beef 3-4 minutes per side without moving. Interior should be rare to medium-rare.

    Transfer beef to a cutting board. Tent loosely with foil and rest 5 minutes.

    Toss scallions with remaining 1 tbsp oil and salt. Char on grill 2-3 minutes per side.
