Ingredients

  • ¾ lb flank or skirt steak
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 2 count large flour tortillas
  • ½ cup shredded cheese (cheddar or Oaxaca)
  • ¼ cup fresh cilantro, chopped

    Slice steak against the grain into 1/4-inch-thick strips.

    Toss beef with lime juice, garlic, cumin, salt, and pepper. Let sit 5 minutes.

    Warm tortillas in a dry skillet over medium heat, 30 seconds per side.

    Heat oil in the same skillet over medium-high until it shimmers, ~90 seconds.

    Sear beef in a single layer without stirring for 2 minutes until edges char.

    Stir and cook 1 more minute until meat is cooked through but still tender.

    Lay a tortilla flat. Add half the beef, cheese, and cilantro down the center.

    Fold in the sides, then roll tightly from bottom to top. Repeat for second burrito.
