Ingredients
- 1 medium, peeled, cored, cut into 8 wedges fresh pineapple
- 2 tbsp brown sugar
- 1 whole fresh lime (juiced)
- ¼ tsp red chili flakes
- ½ cup coconut yogurt or Greek yogurt
- ¼ cup crispy rice cereal or toasted coconut flakes
Instructions

Pat pineapple wedges dry with a paper towel. Brush with olive oil and sprinkle salt on both sides.

Heat a grill pan or outdoor grill to medium-high until water flicks sizzle on contact, ~2 minutes.

Lay pineapple wedges on the grill and cook 3 minutes without moving until deep char marks appear.

Flip each wedge and cook 2 more minutes on the other side until caramelized and juices pool at the edges.

Transfer pineapple to a plate. Drizzle with lime juice, sprinkle brown sugar and chili flakes while still hot.
