Ingredients

  • 3 whole, ripe but firm bananas
  • 1 cup heavy cream
  • 3 whole egg yolks
  • 4 tbsp, divided granulated sugar
  • 8 whole, halved strawberries
  • 1 cup blackberries

Instructions

  1. 1

Heat cream in a skillet over medium until small bubbles form around the edges, ~3 minutes.

  2. 2

Whisk egg yolks with 2 tbsp sugar until pale, ~2 minutes. Slowly add warm cream while whisking constantly.

  3. 3

Return mixture to skillet over low heat. Stir gently until it coats the back of a spoon, 4–5 minutes. Do not boil.

  4. 4

Pour custard into four shallow bowls or glasses. Divide banana slices among them. Let cool 2 minutes.

  5. 5

Sprinkle remaining sugar evenly over each banana portion. Use a kitchen torch or hold over a gas flame until sugar melts and browns, ~90 seconds per serving.

  6. 6

Top with strawberries and blackberries. Serve immediately while sugar shell is still crackling.
