Ingredients

  • 1 cup heavy cream
  • 3 whole egg yolks
  • ½ cup granulated sugar, divided
  • 2 whole bananas, ripe but firm
  • 1 tbsp butter
  • ½ tsp vanilla extract

Instructions

    Heat cream in a saucepan over medium until steaming, ~3 minutes. Whisk egg yolks with 1/4 cup sugar until pale.

    Slowly pour hot cream into yolk mixture while whisking constantly to avoid scrambling eggs.

    Return mixture to saucepan over low heat, stirring constantly until it coats the back of a spoon, ~4 minutes. Add vanilla, then pour into a bowl.

    Slice bananas 1/4-inch thick. Melt butter in a skillet over medium-high, then sauté banana slices until golden-brown, ~2 minutes per side.

    Divide custard into 4 serving dishes or ramekins. Top each with caramelized banana slices.

    Sprinkle 1 tbsp sugar evenly over each dish. Use a kitchen torch to caramelize until deep golden and crackling, ~30 seconds per dish.
