Ingredients
- 4 boneless skinless chicken breasts
- 8 oz fresh mozzarella, sliced
- 1 large tomato, sliced
- ¼ cup fresh basil leaves
- 1 tsp garlic powder
- 2 tbsp olive oil
- 2 tbsp balsamic glaze
- 1 tsp kosher salt
- ½ tsp black pepper

Heat the oven to 400°F. Pat the chicken dry. Cut a deep horizontal pocket into the side of each breast, being careful not to slice all the way through.

Stuff each pocket with mozzarella, a slice or two of tomato, and several basil leaves. Season the outside with salt, pepper, and garlic powder.

Heat the olive oil in a large oven-safe skillet over medium-high. Sear the chicken for about 3 minutes per side until golden.

Transfer the skillet to the oven and roast for 10 to 12 minutes, until the chicken reaches 165°F at the thickest part.

Rest for 3 minutes, then drizzle with balsamic glaze and finish with a few more torn basil leaves.
