Ingredients

  • 1 loaf (8 oz) ciabatta loaf
  • 8 oz fresh mozzarella (buffalo or regular)
  • 2 medium ripe tomatoes
  • ½ cup (packed) fresh basil
  • 2 tbsp balsamic glaze
  • 2 tbsp olive oil

Instructions

    Slice the ciabatta loaf in half lengthwise. Toast cut-sides face-down in a dry skillet over medium heat until golden, about 2 minutes.

    Brush both toasted cut-sides lightly with olive oil. Season with salt and pepper.

    Slice the mozzarella into 1/4-inch-thick rounds. Slice the tomatoes into similar-thickness rounds.

    Layer mozzarella, tomato slices, and fresh basil leaves on the bottom half of the ciabatta.

    Drizzle balsamic glaze over the filling. Top with the other ciabatta half.

    Slice in half crosswise and serve immediately.
