- 1 lb large shrimp, peeled and deveined
- ½ cup sour cream
- 2 whole chipotle peppers in adobo sauce
- 2 clove garlic, minced
- 2 tbsp lime juice
- 2 tbsp olive oil

Add the sour cream, 2 chipotle peppers, minced garlic, and 2 tablespoons lime juice to a blender; blend on high speed for 30 seconds until smooth and bright red, then set aside.

Heat 2 tablespoons olive oil in a 12-inch skillet over medium-high heat until the oil shimmers and slides quickly when you tilt the pan, about 60 seconds.

Add the shrimp to the hot skillet in a single layer; let them cook without stirring for 2 minutes until the undersides turn from translucent to opaque pink.

Flip each shrimp over one at a time using tongs and cook for another 1 minute until the second side is also opaque pink; you should have cooked shrimp throughout.
