Ingredients
- 2 cups cooked sushi rice
- 2 tbsp rice vinegar
- 1 tsp sugar
- ½ tsp salt
- 2 sheets nori (seaweed sheets)
- 4 oz imitation crab stick
- 1 whole avocado, ripe
- ½ whole cucumber, peeled
- 2 tbsp sesame seeds, white
- ¼ cup water

Season cooked sushi rice: whisk rice vinegar, sugar, and salt in a small bowl. Fold gently into warm rice and let cool for 10 minutes.

Cut avocado in half, remove pit, and slice lengthwise into thin strips.

Cut cucumber into thin 6-inch long strips. Shred imitation crab into bite-sized pieces.

Place nori shiny-side down on a bamboo mat. Spread 1 cup seasoned rice evenly over nori, leaving 0.5-inch border at the top.

Sprinkle sesame seeds over the rice, then flip nori so rice is face-down on the mat.

Arrange crab, avocado, and cucumber in a thin line along the center of the nori.

Roll tightly using the bamboo mat, applying gentle pressure. Seal the edge with a damp finger.

Slice roll into 6 pieces using a sharp, wet knife, wiping clean between cuts. Repeat with second sheet.
