Ingredients

  • 14 oz canned artichoke hearts, drained
  • ¾ cup sour cream
  • ½ cup fresh Parmesan cheese, grated
  • 1 whole lemon (zested + juiced)
  • 2 cloves garlic, minced
  • 1 pinch salt and pepper to taste

Instructions

    Pulse artichoke hearts in a food processor until roughly chopped, ~10 pulses.

    Add sour cream, Parmesan, lemon zest, lemon juice, and garlic to the processor.

    Pulse until creamy with small artichoke chunks visible, ~8 pulses. Do not overblend.

    Taste and season with salt and pepper.

    Transfer to a serving bowl. Serve cold or at room temperature.
