Ingredients
- ¾ lb ground beef
- 4 oz bacon, chopped
- 1 small green cabbage head
- ½ medium yellow onion, minced
- 1 cup beef broth
- 2 tbsp tomato paste
Instructions
- 1
Bring a large pot of salted water to a boil. Carefully peel off 8–10 cabbage leaves, blanch until pliable, ~3 minutes. Transfer to a cutting board.
- 2
Cook bacon in a large skillet over medium-high until crispy, ~4 minutes. Remove with a slotted spoon; reserve 1 tbsp fat in the pan.
- 3
Brown ground beef, breaking it apart with a spoon, ~5 minutes. Add onion, cook until softened, ~2 minutes. Stir in tomato paste and cooked bacon.
- 4
Lay a cabbage leaf flat. Spoon 2–3 tbsp filling down the center, fold sides in, then roll tightly from bottom. Repeat with remaining leaves.
- 5
Pour beef broth into the skillet. Arrange rolls seam-side down in the pan. Cover and simmer over medium until rolls are heated through, ~6 minutes.
- 6
Serve hot, spooning pan liquid over each roll. Finish with salt and black pepper to taste.
