Ingredients

  • 6 oz brioche or stale white bread, cut into 0.5-inch cubes
  • 3 tbsp butter, divided
  • 1.5 cups whole milk
  • 3 large eggs
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ cup dried currants or raisins

Instructions

  1. 1

Preheat broiler. Butter a shallow baking dish (8x8 or similar) with 0.5 tbsp butter.

  2. 2

Whisk eggs, milk, sugar, and vanilla in a bowl until smooth. Stir in currants.

  3. 3

Spread bread cubes in baking dish. Pour custard over evenly, pressing bread gently to absorb.

  4. 4

Dot top with remaining 2.5 tbsp butter in small flakes. Let sit 5 minutes for bread to soak.

  5. 5

Broil 4–6 inches from heat until top is golden brown and custard just sets, 6–8 minutes.

  6. 6

Cool 2 minutes. Serve warm in bowls with a spoon — custard will be soft and jammy.
