Ingredients
- 2 6-8 oz each lobster tails
- ½ cup unsalted butter
- 3 cloves garlic cloves, minced
- 2 sprigs fresh thyme sprigs
- ½ whole lemon, halved
- 1 teaspoon sea salt
- ¼ teaspoon black pepper

Pat lobster tails dry with paper towels. Using kitchen shears, carefully cut the hard shell down the center of each tail, being careful not to cut the meat. Gently open each tail like a book.

Season the exposed lobster meat with salt and pepper.

Melt butter in a large heavy-bottomed skillet over medium heat. Add minced garlic and thyme sprigs, stirring frequently for 1-2 minutes until fragrant.

Carefully place lobster tails meat-side down in the butter. Spoon melted butter over the meat continuously. Cook for 6-8 minutes until the meat is opaque and reaches 140°F internal temperature.

Flip the tails over and baste with butter for another 1-2 minutes.

Transfer lobster tails to serving plates. Strain butter through fine mesh, discarding solids, and drizzle over tails. Serve with lemon halves.
