Ingredients

  • 1.5 lbs flank or skirt steak
  • 2 whole lime (juiced)
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 8 whole flour tortillas (10-inch)
  • ½ cup fresh cilantro, chopped

Instructions

  1. 1

Slice steak against the grain into 1/4-inch-thick strips.

  2. 2

Mix lime juice, minced garlic, cumin, salt, and pepper in a bowl. Add beef and toss to coat evenly.

  3. 3

Let meat marinate at room temperature while you prepare everything else, 5 minutes minimum.

  4. 4

Heat a large skillet over medium-high until it shimmers, about 90 seconds.

  5. 5

Add beef in a single layer and sear without stirring for 2 minutes until edges brown and char.

  6. 6

Stir and cook another 2–3 minutes until meat is cooked through but still juicy. Transfer to a plate.

  7. 7

Warm tortillas in the skillet for 20 seconds per side until pliable.

  8. 8

Lay a tortilla flat, add 2–3 tbsp beef down the center, top with cilantro.

  9. 9

Fold sides in, then roll tightly away from you. Repeat with remaining tortillas.

  10. 10

Serve immediately with lime wedges on the side.
