Ingredients
- 6 oz rice vermicelli
- ½ lb shrimp, peeled + deveined
- ¼ lb ground pork (or chicken)
- 3 cloves garlic, minced
- 2 tbsp fish sauce
- 1 whole lime (juiced)
- 3 whole scallions, sliced
- 2 tbsp crispy shallots

Boil water in a large skillet or pot. Add vermicelli, cook per package until just tender, about 3 minutes. Drain well.

Return empty skillet to high heat. Add oil (1 tbsp), then add ground pork—break up with a spoon until no pink remains, ~4 minutes.

Push pork to the side. Add shrimp to open space, sear 90 seconds per side without stirring until edges curl.

Add minced garlic, cook for 30 seconds until fragrant. Toss everything together.
