Ingredients

  • 6 oz rice vermicelli
  • ½ lb shrimp, peeled + deveined
  • ¼ lb ground pork (or chicken)
  • 3 cloves garlic, minced
  • 2 tbsp fish sauce
  • 1 whole lime (juiced)
  • 3 whole scallions, sliced
  • 2 tbsp crispy shallots

Instructions

  1. 1

Boil water in a large skillet or pot. Add vermicelli, cook per package until just tender, about 3 minutes. Drain well.

  2. 2

Return empty skillet to high heat. Add oil (1 tbsp), then add ground pork—break up with a spoon until no pink remains, ~4 minutes.

  3. 3

Push pork to the side. Add shrimp to open space, sear 90 seconds per side without stirring until edges curl.

  4. 4

Add minced garlic, cook for 30 seconds until fragrant. Toss everything together.

  5. 5

Return cooked vermicelli to the pan. Drizzle with fish sauce and lime juice, toss for 1 minute until coated and hot.

  6. 6

Slide onto plates, top with scallions and crispy shallots. Serve immediately.
