Ingredients

  • 1 lb chicken breast, cut into 1-inch cubes
  • ½ cup buffalo sauce
  • ¼ cup ranch dressing
  • 3 cups kale, chopped
  • 2 cups zucchini noodles
  • 2 cups cauliflower florets, small
  • ½ whole lime

Instructions

    Toss cauliflower florets with olive oil, salt, and pepper on a sheet pan. Roast at 400°F until edges char, 10 minutes.

    While cauliflower roasts, pat chicken dry and toss with buffalo sauce in a bowl until evenly coated.

    Spread buffalo chicken on a second sheet pan or air fryer basket. Air-fry at 400°F for 8 minutes, shaking halfway through.

    Arrange kale and zucchini noodles on serving bowls. Top with roasted cauliflower and buffalo chicken.
