Ingredients

  • 1 loaf ciabatta or Italian bread
  • 4 medium tomatoes, ripe
  • 3 cloves garlic, peeled
  • 8 leaves fresh basil
  • 3 tbsp olive oil
  • 1 to taste salt and pepper

Instructions

    Slice bread into 1/3-inch-thick diagonal pieces.

    Dice tomatoes into 1/2-inch pieces; place in a small bowl.

    Mince garlic and tear basil leaves by hand.

    Brush both sides of bread with 1.5 tbsp olive oil.

    Toast bread in a skillet over medium-high until golden, ~90 seconds per side.

    Rub each hot toast with a cut garlic clove until fragrant.

    Toss tomatoes with remaining 1.5 tbsp olive oil, basil, salt, and pepper.

    Spoon tomato mixture onto each toast and serve immediately.
