Ingredients
- 1 head broccoli
- 14 oz firm tofu
- 1 large carrot
- 1 cup bean sprouts
- 3 stalks green onions
- ¼ cup peanuts
- 3 tbsp soy sauce
- 2 tbsp vegetable oil

Press the tofu for 10 minutes, then cut into 1-inch cubes. Cut the broccoli into small florets and peel the carrot into ribbons.

Heat 1 tbsp oil in a large skillet over medium-high. Add tofu and cook until golden on all sides, about 8 minutes. Remove and set aside.

Add remaining 1 tbsp oil to the skillet. Add broccoli and carrot, stir-fry until bright green and tender-crisp, about 5 minutes.

Return tofu to the skillet. Add soy sauce and 2 tbsp water, toss to coat. Cook until sauce thickens slightly, about 2 minutes.
