Ingredients

  • 1.5 lb ground beef
  • 1 medium onion, diced
  • 1 medium carrot, diced
  • ¾ cup frozen peas
  • 1 cup beef broth
  • 2 lb potatoes, peeled and quartered
  • 4 tbsp butter
  • ¼ cup whole milk

    Preheat oven to 400°F. Put potatoes in a pot of cold salted water.

    Bring potatoes to a boil, then simmer until fork-tender, ~15 minutes.

    Heat 2 tbsp butter in a large skillet over medium-high heat until foaming.

    Add ground beef, breaking up with a spoon, until no pink remains, ~6 minutes.

    Stir in diced onion and carrot, cook until softened, ~4 minutes.

    Pour in beef broth and add peas. Simmer 5 minutes, then season with salt and pepper.

    Drain potatoes and mash with remaining 2 tbsp butter and milk until creamy.
