Ingredients
- 3.5 cups all-purpose flour
- 2.25 teaspoons active dry yeast
- ¼ cup sugar
- 1.5 teaspoons salt
- 3 large eggs
- ½ cup milk
- ½ cup unsalted butter
- 1 large egg yolk

In a small bowl, combine the 2.25 tsp yeast, 1 tbsp of the 0.25 cup sugar, and 0.25 cup warm milk (about 110°F). Let sit until frothy, about 5 minutes.

In a large bowl, mix the 3.5 cups flour, remaining sugar, and 1.5 tsp salt. Add the yeast mixture, 3 eggs, and remaining 0.25 cup milk. Stir until a shaggy dough forms.

Knead the dough on a floured surface for 8-10 minutes, until smooth and elastic. Gradually work in the 0.5 cup softened butter, kneading until fully incorporated and the dough is glossy.

Place the dough in a greased bowl, cover, and let rise in a warm spot until doubled, about 1 hour. Punch down, shape into a loaf, and place in a greased 9x5 inch loaf pan.

Cover and let rise again until puffy, about 30 minutes. Preheat the oven to 375°F. Brush the top with the 1 egg yolk beaten with 1 tbsp water.

Bake until deep golden brown and the loaf sounds hollow when tapped, 30-35 minutes. Cool in the pan for 10 minutes, then transfer to a wire rack.
