Ingredients

  • ½ lb ground beef
  • 2 cups cassava flour (farinha de mandioca)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • ½ cup green olives, sliced
  • 2 whole hard-boiled eggs, diced
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cumin

Instructions

    Cook ground beef in a large skillet over medium-high heat, breaking it apart as it cooks, until no pink remains (about 5 minutes). Drain excess fat and set aside.

    In the same skillet, add olive oil and butter over medium heat. Sauté diced onion until golden (about 3 minutes), then add minced garlic and cook for 1 minute until fragrant.

    Return cooked ground beef to the skillet with onion and garlic. Add salt, pepper, and cumin, stirring to combine.

    Gradually add cassava flour, 0.5 cup at a time, stirring constantly over medium heat until the mixture is toasted and fragrant (about 5-7 minutes). The farofa should be dry and crumbly, not clumpy.

    Remove from heat and fold in chopped parsley, sliced olives, and diced hard-boiled eggs. Taste and adjust seasoning as needed.

    Transfer to a serving bowl and serve warm as a side dish alongside rice, beans, and grilled meats.
