Ingredients

  • ¼ cup butter, softened
  • ¾ cup sugar
  • 3 whole eggs
  • 1 cup all-purpose flour
  • 1 cup cooked rice, cooled
  • ½ cup whole milk
  • 1 whole lemon (zested + juiced)
  • 1.5 tsp baking powder
  • ¼ tsp salt

Instructions

    Preheat oven to 350°F. Butter and flour a 9-inch round cake pan.

    Beat butter and sugar until light and fluffy, about 3 minutes.

    Add eggs one at a time, beating well after each addition.

    In a separate bowl, whisk flour, baking powder, lemon zest, and salt.

    Fold rice into the egg mixture gently until just combined.

    Alternate adding flour mixture and milk, stirring until smooth.

    Stir in lemon juice. Pour batter into prepared pan.
