Ingredients
- 2 lb chicken pieces
- 6 cups water
- 1 medium onion
- 3 cloves garlic
- 1 inch ginger
- 1 tsp salt
- ½ tsp black pepper

Place the 2 lb chicken pieces in a large pot and add the 6 cups water. Bring to a boil over high heat, then skim off any foam that rises to the surface.

Add the 1 medium onion (halved), 3 garlic cloves (smashed), and 1 inch ginger (sliced) to the pot. Reduce heat to low, cover, and simmer gently until the chicken is cooked through and tender, about 30-40 minutes.
