Ingredients

  • 2 tablespoons butter
  • 2 medium onions, diced
  • 3 cloves garlic, minced
  • 500 g ground beef
  • 2 tablespoons curry powder
  • ½ teaspoon turmeric
  • 1 teaspoon cumin
  • ½ cup dried apricots, chopped
  • ¼ cup raisins
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 medium apple, grated
  • 2 slices bread, cubed
  • ¼ cup milk
  • 1 whole bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 whole eggs
  • ½ cup milk, for topping
  • ¼ teaspoon turmeric, for topping

Instructions

  1. 1

Preheat oven to 350°F (175°C). Soak bread cubes in milk for 5 minutes, then squeeze out excess liquid.

  2. 2

Heat butter in a large skillet over medium heat. Sauté onions and garlic until softened, about 5 minutes.

  3. 3

Add ground beef and cook, breaking it apart, until browned, about 8 minutes. Drain excess fat if needed.

  4. 4

Stir in curry powder, turmeric, and cumin. Cook for 1 minute until fragrant.

  5. 5

Add tomato paste and stir to coat. Cook for 1 minute.

  6. 6

Pour in beef broth and add bay leaf, apricots, raisins, grated apple, salt, and pepper. Simmer for 10 minutes.

  7. 7

Fold in the soaked bread cubes and remove from heat. Discard bay leaf.

  8. 8

Transfer beef mixture to a buttered 9x13-inch baking dish, spreading evenly.

  9. 9

In a bowl, whisk together eggs, milk, and turmeric. Pour evenly over the beef mixture.

  10. 10

Bake for 20-25 minutes until the egg topping is set and golden.

  11. 11

Let rest for 5 minutes before serving. Serve with yellow rice or sambals.
