Ingredients

  • 8 slices bacon
  • 8 oz pasta (penne or rotini)
  • 1.5 cups cherry tomatoes
  • 4 cups romaine lettuce
  • ¾ cup mayonnaise
  • 2 tbsp lemon juice

Instructions

    Cook bacon in a large skillet over medium-high until crispy, ~8 minutes. Transfer to paper towels; chop when cool.

    Boil salted water in a large pot. Add pasta and cook until just tender, ~10 minutes. Drain and set aside.

    Halve cherry tomatoes. Chop romaine into 1-inch pieces.

    Whisk mayonnaise, lemon juice, salt, and pepper in a large bowl until smooth.
