Ingredients

  • 2 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

Instructions

    Add eggs, milk, flour, sugar, baking powder, and salt to a blender.

    Blend on high until smooth, about 30 seconds. A few small lumps are fine.

    Heat a skillet or griddle over medium until a drop of water sizzles on contact, ~2 minutes.

    Lightly butter the skillet. Pour batter into 3-inch circles, leaving space between.

    Cook until the surface looks dry and bubbles pop, ~2 minutes. Do not stir.

    Flip and cook the other side until golden brown, about 1 minute.

    Transfer to a plate. Repeat with remaining batter in batches.

    Serve warm with butter, maple syrup, or fresh berries.
