Ingredients
- 1.5 cans (15 oz each) black beans
- ½ cup breadcrumbs
- ½ medium onion
- 2 cloves garlic
- 4 cups mixed vegetables (zucchini, broccoli, mushrooms, carrots)
- 3 tablespoons olive oil
- ½ cup hummus
- 1 to taste salt and pepper

Preheat oven to 425°F. Chop the 4 cups mixed vegetables into bite-size pieces and toss with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet.

Roast vegetables for 20-25 minutes, until tender and lightly browned, stirring halfway.

Meanwhile, finely chop the 1/2 onion and 2 garlic cloves. In a bowl, mash the 1.5 cans black beans with a fork until mostly pasty but some whole beans remain.

Stir the onion, garlic, 1/2 cup breadcrumbs, and a pinch of salt and pepper into the beans. Form into 4 patties.

Heat 1 tbsp olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side, until golden and firm to the touch.
