Ingredients

  • 2 cups all-purpose flour
  • ¾ cup warm water
  • ½ teaspoon salt
  • ½ cup ghee or butter, melted
  • ¾ cup honey
  • 2 tablespoons sesame seeds (optional)

Instructions

    Pour 2 cups flour into a large mixing bowl, then add 0.5 teaspoon salt and stir with a wooden spoon until combined.

    Pour 0.75 cup warm water into the flour mixture while stirring with a wooden spoon until a soft, sticky dough forms.

    Knead the dough in the bowl using your hands for 5 minutes, pressing and folding it against itself, until it becomes smooth and slightly elastic, like a stretched earlobe.

    Cover the bowl with a clean kitchen towel and let the dough rest at room temperature for 15 minutes while you prepare a 12-inch skillet.

    Pinch off a piece of dough about the size of a golf ball and stretch it with your hands over the skillet until it is paper-thin and covers the bottom, about 10 inches across.

    Place the skillet over medium heat and cook the dough for 1 to 2 minutes until the bottom is light golden and the edges look dry.

    Drizzle 1 tablespoon of melted ghee evenly across the cooked dough layer, then slide it onto a large plate.

    Repeat steps 5–7 with the remaining dough, stacking each finished layer on top of the previous one on the same plate, drizzling ghee between each layer.

    When all dough layers are stacked, pour any remaining ghee evenly over the top layer, letting it soak into the crevices.

    Pour 0.75 cup honey slowly and evenly over the entire stack, covering the surface completely so the honey soaks down between the layers.

    Sprinkle 2 tablespoons sesame seeds over the honey if desired, then let the pastry rest at room temperature for 3 minutes before serving.
