Ingredients
- 10 oz beef biltong, sliced into strips
- 12 oz potatoes, cut into 1-inch cubes
- 8 oz carrots, sliced into 1/2-inch rounds
- 1 medium yellow onion, cut into wedges
- 2 cups beef broth
- 2 tbsp tomato paste

Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering, ~90 seconds.

Add onion and sauté 3 minutes until softened, then stir in garlic and tomato paste for 30 seconds until fragrant.

Add beef biltong, potatoes, and carrots, tossing to coat with oil and paste.

Pour in beef broth and bring to a boil, then reduce heat to medium-low and simmer covered 12 minutes.
