Ingredients

  • 2 cups masa harina (corn flour)
  • 1.5 cups warm water
  • 1 lb ground beef
  • 1.5 cups shredded cheddar or Oaxaca cheese
  • 1.5 tsp cumin
  • 1 whole jalapeño, minced
  • 2 cups neutral oil for frying

Instructions

    Mix masa harina and warm water until a soft dough forms, like playdough. Let rest 5 minutes.

    Brown ground beef in a skillet over medium-high, breaking up with a spoon, until no pink remains, ~6 minutes.

    Stir cumin and minced jalapeño into beef, cook 1 minute until fragrant. Season with salt and pepper.

    Heat oil in a tall heavy pot or wok to 350°F. Pinch off a golf-ball-sized piece of masa dough.

    Gently press dough into a thin cup shape around your finger, carefully lower into hot oil, fry 90 seconds per side until golden.

    Remove cooked masa cup with a slotted spoon, fill with spiced beef, top with cheese, and serve immediately while still crispy.
