Ingredients
- 2 cups masa harina (corn flour)
- 1.5 cups warm water
- 1 lb ground beef
- 1.5 cups shredded cheddar or Oaxaca cheese
- 1.5 tsp cumin
- 1 whole jalapeño, minced
- 2 cups neutral oil for frying

Mix masa harina and warm water until a soft dough forms, like playdough. Let rest 5 minutes.

Brown ground beef in a skillet over medium-high, breaking up with a spoon, until no pink remains, ~6 minutes.

Stir cumin and minced jalapeño into beef, cook 1 minute until fragrant. Season with salt and pepper.

Heat oil in a tall heavy pot or wok to 350°F. Pinch off a golf-ball-sized piece of masa dough.
