Beef Tripa Tacos

Ingredients
- 2 lbs beef tripe, cleaned
- 1 whole yellow onion, halved
- 1.5 tsp cumin
- 1 whole lime, halved
- 12 whole corn tortillas
- ½ cup white onion, finely diced
- ½ cup fresh cilantro, chopped
Instructions

Place tripe, halved onion, and cumin in a large pot. Cover with water, bring to a boil over high heat.

Reduce to a simmer, cover, and cook until tripe is tender, about 30–35 minutes.

Drain and discard liquid and onion. Return tripe to the pot off heat. Season with salt, pepper, and squeeze of lime juice.

Warm tortillas in a dry skillet over medium heat, 30 seconds per side until pliable.

Fill each tortilla with a spoonful of tripe. Top with diced onion and cilantro.

Serve immediately with lime wedges on the side.
