Ingredients
- ½ lb beef cutlets (thin-pounded)
- ½ medium yellow onion
- 3 whole dill pickle spears
- 3 tbsp Dijon mustard
- ½ cup beef broth
- ¼ cup all-purpose flour

Slice onion into thin strips. Spread each beef cutlet flat on a cutting board.

Spread mustard on each cutlet, lay a pickle spear and some onion in the center, then roll tightly and secure with a toothpick.

Dust each roll lightly with flour on all sides, shaking off excess.

Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

Sear rolls 2 minutes per side without moving until golden brown, then pour in broth and reduce heat to medium.
