Ingredients
- 1 lb ground beef
- 8 count flour tortillas (6-inch)
- 1.5 tbsp chili powder
- ¾ tsp cumin
- ½ tsp garlic powder
- 1 cup shredded cheddar cheese
- 2 tbsp vegetable oil (for frying)
- 1 set salsa, shredded lettuce, diced tomato, sour cream (for serving)

Cook ground beef in a skillet over medium-high, breaking apart with a spoon, until no pink remains, ~6 minutes.

Drain excess fat. Stir in chili powder, cumin, garlic powder, and 1/4 cup water. Simmer 2 minutes.

Heat 2 tbsp oil in a separate skillet over medium-high until shimmering, ~60 seconds.

Holding a tortilla at the center with tongs, dip one half into hot oil until puffed and golden, ~15 seconds. Flip and fry the other half.

Transfer to a paper-towel-lined plate. Repeat with remaining tortillas.

Gently open each puffy tortilla at the crease. Fill with seasoned beef, cheese, and desired toppings.
