Ingredients

  • 1 lb ground beef
  • 8 count flour tortillas (6-inch)
  • 1.5 tbsp chili powder
  • ¾ tsp cumin
  • ½ tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 2 tbsp vegetable oil (for frying)
  • 1 set salsa, shredded lettuce, diced tomato, sour cream (for serving)

Instructions

    Cook ground beef in a skillet over medium-high, breaking apart with a spoon, until no pink remains, ~6 minutes.

    Drain excess fat. Stir in chili powder, cumin, garlic powder, and 1/4 cup water. Simmer 2 minutes.

    Heat 2 tbsp oil in a separate skillet over medium-high until shimmering, ~60 seconds.

    Holding a tortilla at the center with tongs, dip one half into hot oil until puffed and golden, ~15 seconds. Flip and fry the other half.

    Transfer to a paper-towel-lined plate. Repeat with remaining tortillas.

    Gently open each puffy tortilla at the crease. Fill with seasoned beef, cheese, and desired toppings.

    Serve immediately with salsa, sour cream, lettuce, and tomato on the side.
