Ingredients

  • 8 oz rice noodles (pad thai width)
  • ½ lb ground beef or thinly sliced beef
  • 2 tbsp tamarind paste
  • 2 tbsp soy sauce
  • 1 tbsp palm sugar or brown sugar
  • 1 whole lime (zested + juiced)
  • ¼ cup crushed peanuts

Instructions

    Soak rice noodles in hot water for 8 minutes until soft but still chewy, then drain.

    Whisk together tamarind paste, soy sauce, sugar, and lime juice in a small bowl.

    Heat oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Add beef and cook, breaking it up with a spoon, until browned with no pink, 4-5 minutes.

    Toss in drained noodles and sauce; stir constantly until noodles are coated and heated through, 2 minutes.

    Divide between bowls, top with crushed peanuts and lime zest, serve with lime wedges and chili powder on the side.
