Ingredients

  • 1 lb ground beef
  • 6 cups beef broth
  • 3 tbsp soy sauce
  • 2 tbsp ginger, minced
  • 2 tbsp chili oil (or sriracha)
  • 12 oz fresh ramen or egg noodles
  • 4 pieces scallion pancakes (frozen or fresh)

Instructions

    Bring broth to a simmer in a large pot over medium heat.

    Roll ground beef into 1-inch meatballs, then drop them into the simmering broth.

    Stir in ginger, soy sauce, and chili oil. Let simmer for 6 minutes until meatballs are cooked through.

    Add noodles and cook until tender, ~4 minutes. While noodles cook, heat scallion pancakes in a skillet or toaster oven.
