Ingredients
- 1.5 lb beef round steak, thin-cut
- 1 medium carrots, matchstick-cut
- ½ cup cheddar cheese, sliced
- ½ cup sweet pickled vegetable mix (or diced pickles + pimentos)
- 3 tbsp soy sauce
- 2 tbsp ketchup
- ¾ cup beef broth
- 2 tbsp cooking oil

Lay beef steak on a cutting board and pound it thin with a mallet until about 1/4-inch thick.

Layer carrots, cheese, and pickled vegetables across the center. Roll tightly and secure with toothpicks or tie with kitchen twine.

Heat oil in a large skillet over medium-high until shimmering. Sear the roll 2 minutes per side until browned.
