Ingredients

  • 1.5 lb beef round steak, thin-cut
  • 1 medium carrots, matchstick-cut
  • ½ cup cheddar cheese, sliced
  • ½ cup sweet pickled vegetable mix (or diced pickles + pimentos)
  • 3 tbsp soy sauce
  • 2 tbsp ketchup
  • ¾ cup beef broth
  • 2 tbsp cooking oil

Instructions

    Lay beef steak on a cutting board and pound it thin with a mallet until about 1/4-inch thick.

    Layer carrots, cheese, and pickled vegetables across the center. Roll tightly and secure with toothpicks or tie with kitchen twine.

    Heat oil in a large skillet over medium-high until shimmering. Sear the roll 2 minutes per side until browned.

    Whisk soy sauce, ketchup, and broth together, then pour into the pan around the roll.

    Reduce heat to medium and simmer 8–10 minutes until the sauce thickens and the roll is cooked through.

    Remove toothpicks or twine, slice into 1-inch-thick rounds, and serve with sauce spooned over the top.
