  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 cloves garlic
  • 1 bunch asparagus
  • ½ cup plain yogurt
  • ½ cup fresh parsley
  • ½ lemon

    In a large bowl, combine 1 lb ground beef, 1/2 cup breadcrumbs, 1 egg, and 1 minced garlic clove. Mix gently until just combined; do not overwork.

    Shape the mixture into 12 equal meatballs. Heat 1 tbsp olive oil in a large skillet over medium-high heat.

    Add the meatballs in a single layer and cook, turning occasionally, until browned on all sides and cooked through, about 10-12 minutes. Remove and set aside.

    While the meatballs cook, trim the woody ends from 1 bunch asparagus. In the same skillet, add the asparagus and cook over medium heat until tender-crisp, about 5-7 minutes, seasoning with salt and pepper.

    In a small bowl, combine 1/2 cup yogurt, 1/2 cup chopped parsley, the remaining garlic clove (minced), and the juice of 1/2 lemon. Stir until smooth; season with salt and pepper.
