Beef Mafé

Senegalese peanut stew with tender beef and sweet potatoes, finished in one skillet in under 20 minutes. Rich, deeply satisfying, and finished with a squeeze of lime.

Ingredients

  • 1.25 lb beef chuck or sirloin, cut into 1-inch cubes
  • 1 medium sweet potato, peeled and cut into 3/4-inch cubes
  • 1 medium yellow onion, diced
  • ½ cup natural peanut butter (or smooth peanut butter)
  • 2 tbsp tomato paste
  • 1.5 cups beef broth
  • 1 whole lime, cut into wedges

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add beef cubes and brown on all sides, stirring occasionally, 6–7 minutes. Season with salt and pepper.

    Stir in diced onion and cook until softened and translucent, 2 minutes.

    Add tomato paste and stir constantly for 60 seconds until the paste darkens and becomes fragrant.

    Pour in broth and whisk in peanut butter until fully combined. Add sweet potato cubes and bring to a simmer.

    Simmer uncovered for 6–7 minutes until sweet potato is tender and sauce coats the back of a spoon.

    Taste and adjust salt and pepper. Squeeze lime over the stew and serve hot in bowls.
