Ingredients

  • 1.5 lb russet potatoes
  • ½ lb ground beef
  • ½ medium onion, finely diced
  • 2 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup all-purpose flour
  • 2 whole large eggs
  • 1 cup panko breadcrumbs
  • 3 cups vegetable oil for frying

Instructions

  1. 1

Peel and cut potatoes into chunks. Boil in salted water for 15 minutes until tender. Drain and mash until smooth.

  2. 2

Heat 2 tbsp butter in a skillet over medium heat. Sauté diced onion for 3 minutes until softened.

  3. 3

Add ground beef and cook for 5 minutes, breaking it apart, until browned. Season with salt and pepper. Cool completely.

  4. 4

Mix cooled mashed potatoes with cooled beef mixture. Shape into 12 oval croquettes (about 3 inches long).

  5. 5

Set up three bowls: flour in first, beaten eggs in second, panko in third. Coat each croquette in flour, then egg, then panko, pressing gently.

  6. 6

Heat oil to 350°F in a heavy pot or deep fryer. Working in batches, fry croquettes 2–3 minutes per side until golden brown.

  7. 7

Drain on paper towels. Serve hot with tonkatsu sauce and Japanese mustard.
